ci: upgrade goreleaser-action to v6#7

The release workflow fails because goreleaser-action v5 uses GoReleaser v1, which does not support version 2 configuration files. Upgrading to goreleaser-action v6 defaults to GoReleaser v2, which handles version 2 configuration properly. Co-authored-by: arran4 <111667+arran4@users.noreply.github.com>
