docs(prompt-management): update version publishing flow for new UI

Problem

The prompt management docs describe the old editing buttons ("Edit latest", "Use as latest", "Publish version") and tell users to refresh the page on a publish conflict, losing their edits.

Changes

• "Edit latest" / "Use as latest" → single New version button
• Publish button now shows the next version number (e.g. Publish v4)
• Conflict guidance updated: edits are preserved in the editor, no refresh needed
• "Prompt Management" → "Prompt management" (sentence case)

When to merge

After the app changes ship: PostHog/posthog#68142 (button rename) and PostHog/posthog#67895 (conflict handling).
